Introduction:
Aflatoxins are produced by certain molds ASPERGILUS.FLAVOUS and ASPERGILUS .PARASITICUS.
The staple commodities regularly contaminated with aflatoxins include cassava, chillies, corn, cotton seed, millet, peanuts, rice, sorghum, sunflower seeds, tree nuts, wheat, and a variety of spices intended for human or animal consumption
These toxins can cause tissue necrosis, cirrhosis and liver cancer.
The clinical symptoms observed in humans include vomiting, abdominal pain, Acute hepatic lesions such as lipid edema, Pulmonary edema, Muscle tremor, coma, Seizures and death with cerebral edema And the involvement of organs such as the liver, kidneys and heart.
There are four main types of aflatoxin including B1 and B2, G1 and G2, and two metabolic products called M1 and M2, Which can infect livestock and human feed.
Aflatoxin B1 is considered the most toxic and mutagenic which is produced by both Aspergillus flavus and Aspergillus parasiticus with most abundance in seeds and grain.
